Ingredients:

2 Tablespoon cooking oil

1 Finely chopped medium onion

1 Small tin (227g) chopped tomatoes / 200g fresh tomatoes / 1 tablespoon tomato puree

40g/ 2 heaped teaspoons Spice Guru Magical Meat Masala Blend

450g Diced boneless lamb
-
½ - 1 Cup water
-
Chopped coriander to garnish
Method

In a frying pan heat 1 tablespoon of oil and seal the lamb. Leave to one side.

In a saucepan heat the remaining oil and sauté the onions until brown.

Add the tomatoes and the Spice Guru Magical Meat Masala Blend. Stir and cook for 2 – 3 minutes.

Add the lamb, mix thoroughly, cover and cook for 25 minutes on a medium heat, stirring occasionally until the lamb is cooked. 5 minutes before the end of cooking time add ½ - 1 cup of water if more sauce is required.

Garnish with coriander and serve with rice, naan and salad.
To make a delicious Chicken Curry replace the lamb with 450g chicken and follow steps 2 to 4 above. You do not need to pre-cook your chicken.
